Chilli chicken is one of the famous dish in India it’s been cherished in all parts of world there are so many varieties of styles it can be made but this chilli chicken recipe is of my style similar to restaurant taste here are ingredients and cooking procedure
Ingredients
- 500 g boneless chicken, bite-size
- 2 tbsp cornflour
- 1 tbsp all-purpose flour
- 1 egg
- 1 tbsp soy sauce
- 1 tsp ginger-garlic paste
- ½ tsp black pepper
- Salt to taste
- Oil for frying
Sauce
- 1 tbsp oil
- 1 tbsp chopped garlic
- 1 onion, cubed
- 1 green bell pepper, cubed
- 3–4 green chillies, sliced
- 2 tbsp soy sauce
- 1 tbsp chilli sauce
- 1 tbsp ketchup
- 1 tsp vinegar
- ½ tsp sugar
- ¼ cup water
- 1 tsp cornflour + 2 tbsp water
Method
- Marinate: Mix chicken with egg, cornflour, flour, soy sauce, ginger-garlic, pepper and salt. Rest 15–20 minutes.
- Fry: Deep-fry until golden and crispy. Drain.
- Stir-fry: Heat oil, sauté garlic, onion, bell pepper and chillies for 1–2 minutes.
- Make sauce: Add soy sauce, chilli sauce, ketchup, vinegar, sugar and water. Bring to a simmer.
- Thicken: Add the cornflour slurry and stir until glossy.
- Finish: Toss in the crispy chicken and coat well. Serve immediately with fried rice or noodles.
Tip: For that restaurant-style chilli chicken, keep the vegetables slightly crunchy and add the fried chicken only at the very end.
