Ingredients You'll Need to Make Mutton Haleem

Cracked wheat 500 gm Basmati rice 100gm Masoor dal 100 gm Toor dal 100 gm Moong dal 100gm Handfull almonds 100gm chana dal mutton 3 kgm marinate meat Yogurt 1/2 kg 300 gm ginger garlic paste
10 green chillies 5 tsp red chilli powder 1tsp haldi Powder
whole spices Required
Kabab Chini 1 Tsp Cloves 1/2 Tsp Black Cumin (Shahi Zeera) 1 Tsp star anise 4 Cloves 10 black peper corn 1 tsp
Garnishing ingredients Half cup Cilantro handful mint 1tsp zeera salt to taste mix well
I have used of instant pot for this recipe of Mutton Haleem add some water then pressure cook for 45 minutes remove excess oil from top and keep it on side .When you cook Haleem always use the heavy bottom non stick Pot so that it wont stick to the bottom
now add 5 litre water add salt to taste once it start to boil add grinded paste of lentils we made it earlier cook for 20 min on high flame now we add the meat khorma add powdered mix well it wont have to stick to the bottom on add fried onions half kg add clarified butter 300 gm mix welll add milk 1 cup add 4 lemon mix welll garnish it with cilenatro 1/2 bbunch cook on high flame with mixing it from the bottom once you see oil separtes its ready to serve garnish it with fried cashews ,squeezed lemon and cilantro

Cooking Steps
Prepare Lentils and Wheat: Wash and soak the cracked wheat and assorted lentils for a few hours or overnight. Drain them before cooking.



Fry to taste: Heat oil or ghee in a large pan. Add whole spices and chopped onions. Fry until the onions are golden brown.

Add meat and seasonings:Add the diced meat to the pan and simmer until it changes color. Add ginger garlic paste, turmeric, red pepper powder and salt and mix. Fry for a few minutes until fragrant
Cook the lentils and wheat.  Add soaked lentils and Cracked wheat in  a grinder grind it ot Fine paste  Stir well.

Boil and Cook Pour in water  or broth and bring the mixture to a boil. Reduce the heat to a boil and cover the pot. Simmer for several hours, stirring occasionally to prevent sticking.

Blend and MixOnce the meat and lentils are tender, use an immersion blender to gently blend the mixture until smooth. Alternatively, you can use a masher for clumping.

Yogurt and Garam Masala (Whole spices)  Add yogurt and garam masala and mix to blend flavors. Simmer for another 15-20 minutes.

Adjust Consistency: If Haleem is too thick, add more water or broth to achieve desired consistency.

Serving and Garnishing :Place the haleem in the serving bowl. Garnish with fresh coriander leaves, roasted onions and a squeeze of lemon for a refreshing touch and add fried cashews on top layer of Mutton Haleem.I have made Beef harees Recipe aswell

Hyderabadi Chicken Dum  biryani Full of flavours  ingredients:

for this Chicken Dum biryani  you will need whole spices 

 Green cardamom      10 pods

black pepper corns    1/2 tsp

fennel seeds                 1/2 tsp

coriander seeds           1 1/2 tsp

cinnamon sticks           10 sticks

cloves                              15

bay leaves                       2

Black Cumin seeds        1 tsp

star anis                            2 

Turmeric powder               1/2 tsp

chilli powder                       2 tbs

Yogurt                                  400 gms

ginger garlic paste              3 tbs

paste green chillies              8

mints  half bunch  paste      

chicken                                    1 kg

onion                                         3 medium sized 

salt                                             as per taste

ghee                                           1 tbs

milk                                             one cup

Saffron sticks                             few

cooking oil                                   250 gm 

Directions to make Hyderabadi Chicken Biryani:

  1. Heat oil and ghee in a large pot. Add the sliced onions and fry until they turn golden brown.

  2. Add the ginger-garlic paste and sauté for a few seconds.

  3. Add the chicken pieces and sauté for 5-6 minutes until they turn brown.

  4. Add the yogurt, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, biryani masala, and salt. Mix well and cook for 10-15 minutes.

  5. Add chopped coriander leaves, mint leaves, and lemon juice. Mix well and cook for another 2-3 minutes.

  6. In a separate pot, boil water with green cardamoms, cloves, cinnamon sticks, and bay leaf. Add the soaked rice and cook until it is 80% done. Drain the water.

  7. Layer the rice on top of the chicken mixture in the pot. Cover with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and the flavors have infused.

  8. Garnish with fried onions, chopped coriander leaves, and mint leaves. Serve hot with raita and salan (a spicy curry).
