 How to make Restaurant Style Authentic Hyderabadi Dum ka kheema at home ?
The recipe of authentic Hyderabadi Dum ka kheema (keema) is one of the delect recipes of Hyderabad ,Dum Means A method of cooking it involves a process that cooking anything in closed vessel or pot without letting the flavours out of pot .

Kheema or keema is a minced meat it could be any meat like chicken ,beef or lamb .

The recipe i am sharing here is made with Minced Lamb meat .The flavour of this hyderabadi Dum ka keema is smoky spicy and aromatic spices of dry fruits .
Hyderabadi Dum ka keema is made with roasting dry fruits with whole spices and it is cooked to perfection in my youtube kitchen Hyderabadirelish 

What ingredients goes in Authentic hyderabadi Dum ka Kheema (keema)?
The ingredients are divided in two major parts

First one is Dry fruits
Second one is Whole Spices


The actual flavour of authentic hyderabadi Dum ka keema comes from infused charcoal in minced mutton before cooking ,this process is done just prior to start frying minced mutton in which we place burning charcoal in between minced mutton and we apply ghee on the burning charcoal and let it burn inside closed container with lid closed .what happens with this is the smell of charcoal is infused in minced mutton and it will hold that smell and smoky flavour after cooking dum ka keema.

Ingredients of dum ka kheema

Almonds - 20 gm
Pistachio -10 gm
Charoli (chironji) -20 gm
Poppy seeds - 1 tbs
Tailed pepper (kababchini) - 1tbs
Cinnamon Sticks - 4 medium size
green cardamom -4
Black cardamom - 1
black cumin seeds (Caraway) - 1 tbs

Spices for Hyderabadi Dum ka kheema

Ginger garlic paste 3 tbs
chilli powder - 2 tbs
yogurt (curd) -200 gm
Salt to taste
Dry fruits (almond,pista,chironji) roasted on low flame and grinded to make a paste
Dry roast other ingredients in a frying pan on low flame and grinded to fine paste and mixed with dry fruits paste and kept aside
mix all spices with minced mutton (lamb minced meat ) with yogurt and cooked with cooking oil with fried onions for 25 minutes on medium low flame then add paste that we have set aside and cooked for another 15 minutes on low flame
once it turns color to dark red in color garnish it with cilantro and mints leaves
yummy authentic hyderabadi Dum ka kheema is ready to be served
