Method of Making Chicken 65 Recipe

Chicken 65 recipe can be made with chicken with the bone and boneless chicken breasts
In this recipe of chicken 65 I am taking Boneless Chicken Breasts add all ingredients from Chicken 65 Breasts Spices listed above mix it well and let it sit for 2 hours for best rest results

Once done,Fry it on medium low flame so that chicken is cook perfectly cooked through .once fried chicken is ready then we will do the tempering of the chicken 65 we will saute garlic chopped with few drops of cooking oil and then garnish it with Chilli garlic sauce with curry leaves .Once cooked perfectly Chicken 65 is coated with light gravy of Chilli garlic Sauce .

Method of Making Vegetable Fried Rice
First cook the Basmati rice until 70% done and keep it aside for sometime ,now after this we will prepare Gravy of mixed vegetables Fry all ingredients with light touch of Cooking oil ,once the gravy is ready add soya sauce and cook it for sometime so the flavours from soya sauce penetrates inside the Vegetable gravynow we will Fry rice with this gravy of mixed vegetables and cook it on medium low flame for sometime ,we will add White vinegar to this mixed vegetable rice and saute it bit ,Thats it now Mixed vegetable Fried is ready to be served

Chicken Biryani is one of the most flavourful and delighted recipes from Hyderabad. hyderabadi Biryani can be made simple with two methods one with raw meat (chicken or Lamb with bones) and other one is Cooked meat with spices. The authentic Hyderabadi Biryani flavours comes with raw meat with hints of spices and fried onions.

I have used aged Basmati Biryani Rice long grain soaked in for half hour as per instruction on rice bag.I made this biryani with raw meat marinated with spices and yogurt .for best results marinate the chicken overnight and cook the rest of the recipe next day after 12 hours in fridge . restaurants people use whole masala and grind it to fine powder and marinade the chicken that gives nice flavour and the aroma of recipe will get your taste buds to next level .hyderabadi chicken dum biryani recipe i am making with same proportions is good for 4 people Hyderabadi Chicken biryani Full of flavours ingredients: for this Chicken biryani you will need whole spices green cardamom 10 pods black pepper corns 1/2 tsp fennel seeds 1/2 tsp coriander seeds 1 1/2 tsp cinnamon sticks 10 sticks cloves 15 bay leaves 2 Black Cumin seeds 1 tsp star anis 2 turmeric powder 1/2 tsp chilli powder 2 tbs Yogurt 400 gms ginger garlic paste 3 tbs paste green chillies 8 mints half bunch paste chicken 1 kg onion 3 medium sized salt as per taste ghee 1 tbs milk one cup Saffron sticks few cooking oil 250 gm For hyderabadi biryani full of flavour grind all the ingredients in to fine powder then follow the biryani recipe The above ingredients can be made to fine powder and used as biryani masala powder process of Biryani Dum :In a heavy bottom pan add 4 litre water add 2 cinnamon sticks,3 bay leaves, Shahi zeera (black cumin seeds) ,4 drops of lemon juice ,salt to taste and 2 spoons of oil .oil and lemon helps to cook rice evenly .let the water boil with lid closed once boiled add 1 kg of Basmati rice and cooked it for about 8 to 10 minutes once rice is cooked 90% (rice will breaks little hard ) strain the water from it and set it aside. Step 5 : Add marinated chicken from Step3 to heavy bottom pan on top that marinate add rice that was set aside pour one cup of milk with saffron pieces to top off . last step in making hyderabadi dum biryani restaurant style is the steaming process of rice the basmati rice must be cooked with aluminium foil covered so that no steam escapes from the cooking pan.
close lid and cook it on high flame after 5 minutes you see steam coming out of pan then lower the flame to medium low and wait 20 minutes .after 20 minutes remove the lid and poke spatula to bottom of pan see it should come out dry that shows that Biryani is cooked and ready to be served .full of flavour recipe Hyderabadi Dum Biryani Is ready.

 How to make Restaurant Style Authentic Hyderabadi Dum ka kheema at home ?
The recipe of authentic Hyderabadi Dum ka kheema (keema) is one of the delect recipes of Hyderabad ,Dum Means A method of cooking it involves a process that cooking anything in closed vessel or pot without letting the flavours out of pot .

Kheema or keema is a minced meat it could be any meat like chicken ,beef or lamb .

The recipe i am sharing here is made with Minced Lamb meat .The flavour of this hyderabadi Dum ka keema is smoky spicy and aromatic spices of dry fruits .

What ingredients goes in Authentic hyderabadi Dum ka Kheema (keema)?
The ingredients are divided in two major parts

First one is Dry fruits
Second one is Whole Spices


The actual flavour of authentic hyderabadi Dum ka keema comes from infused charcoal in minced mutton before cooking ,this process is done just prior to start frying minced mutton in which we place burning charcoal in between minced mutton and we apply ghee on the burning charcoal and let it burn inside closed container with lid closed .what happens with this is the smell of charcoal is infused in minced mutton and it will hold that smell and smoky flavour after cooking dum ka keema.

Ingredients of dum ka kheema

Almonds - 20 gm
Pistachio -10 gm
Charoli (chironji) -20 gm
Poppy seeds - 1 tbs
Tailed pepper (kababchini) - 1tbs
Cinnamon Sticks - 4 medium size
green cardamom -4
Black cardamom - 1
black cumin seeds (Caraway) - 1 tbs

Spices for Hyderabadi Dum ka kheema

Ginger garlic paste 3 tbs
chilli powder - 2 tbs
yogurt (curd) -200 gm
Salt to taste
Dry fruits (almond,pista,chironji) roasted on low flame and grinded to make a paste
Dry roast other ingredients in a frying pan on low flame and grinded to fine paste and mixed with dry fruits paste and kept aside
mix all spices with minced mutton (lamb minced meat ) with yogurt and cooked with cooking oil with fried onions for 25 minutes on medium low flame then add paste that we have set aside and cooked for another 15 minutes on low flame
once it turns color to dark red in color garnish it with cilantro and mints leaves
yummy authentic hyderabadi Dum ka kheema is ready to be served
